                                     Simple Vegan Coconut Rice

Ingredients:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 tablespoon coconut oil
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh cilantro (for garnish)

Kitchen Tools Needed:

  • Medium saucepan
  • Measuring cups
  • Measuring spoons
  • Fork

Instructions:

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice, coconut milk, water, coconut oil, and salt.
  • Bring the mixture to a boil over medium heat.
  • Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let it sit covered for an additional 5 minutes.
  • Fluff the rice with a fork and garnish with chopped cilantro before serving.
