Simple Vegan Coconut Rice
Ingredients:
- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 cup water
- 1 tablespoon coconut oil
- 1/2 teaspoon salt
- 1 tablespoon chopped fresh cilantro (for garnish)
Kitchen Tools Needed:
- Medium saucepan
- Measuring cups

Instructions:
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, coconut oil, and salt.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro before serving.
