Tacos
Ingredients:
- 1 medium sweet potato (about 200g), peeled and diced
- 1 can (400g) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 small corn tortillas
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges for serving

Instructions:
- In a medium pot, boil water and add the diced sweet potato. Cook for about 10 minutes or until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the cooked sweet potato, black beans, cumin, smoked paprika, salt, and pepper. Stir and cook for about 5 minutes until heated through.
- Warm the corn tortillas in a separate skillet or microwave until pliable.
- Assemble the tacos by placing the sweet potato and black bean mixture on each tortilla. Top with sliced avocado and fresh cilantro.
- Serve with lime wedges on the side.
