Vegan Sweet Potato and Black Bean Tacos

Ingredients:

  • 1 medium sweet potato (about 200g), peeled and diced
  • 1 can (400g) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

  • Skillet
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • In a medium pot, boil water and add the diced sweet potato. Cook for about 10 minutes or until tender. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add the cooked sweet potato, black beans, cumin, smoked paprika, salt, and pepper. Stir and cook for about 5 minutes until heated through.
  • Warm the corn tortillas in a separate skillet or microwave until pliable.
  • Assemble the tacos by placing the sweet potato and black bean mixture on each tortilla. Top with sliced avocado and fresh cilantro.
  • Serve with lime wedges on the side.
