Ingredients:

  • 1 cup canned chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  • Heat olive oil in a pan over medium heat.
  • Add chopped onion and sauté until translucent.

  • Add the chickpeas and coconut milk, mixing thoroughly.
  • Simmer for 5-7 minutes until heated through and flavors meld.
  • Season with salt to taste and garnish with fresh cilantro before serving.
